Grilled Garlic Chicken with Spinach Dressing

With a hint of garlic and ginger, this humble chicken breast with spinach dressing makes one incredible midweek meal in less than 30 minutes!


The perks of this dish is not only that it’s tasty and juicy but also very healthy. 


Serves – 2


A. For Chicken marination
400g of chicken breast, washed
A pinch of pepper powder
A pinch of red chilli powder
A pinch cardamon powder
A pinch of cumin powder
Salt to taste

Juice of one lemon 
½ tsp ginger & garlic, crushed
2 tbsp olive oil 
½ tsp parsley
1 tsp oregano
¼ tsp chaat masala
1 tsp hung curd
A few drops of green tabasco
B. For Spinach Dressing
1 tbsp olive oil
½ tsp ginger garlic, crushed
1 cup of spinach, chopped and washed 
⅛ cup of hung curd
1 tbsp milk
Salt to taste
A pinch of red chilli powder
A pinch of ginger garlic powder 


1. Slice the chicken breast, but not all the way through.

2. Put a pinch of pepper powder, red chilli powder, cardamon powder, cumin powder, Salt to taste, juice of one lemon, crushed ginger & garlic, olive oil, parsley, oregano, chaat masala, hung curd, green tabasco over both sides of the chicken & massage the chicken for about 5-10 minutes. 


3. Marinate for 30 minutes.

4. Now for the spinach dressing, heat olive oil in a pan and sauté crushed ginger garlic until they take a golden brown colour. Add spinach and cook for 3-4 minutes.


5. Add the hung curd and milk and sauté for a minute. Add salt, red chilli powder, ginger garlic powder & cook till all the water evaporates. 


6. Now grease a non-stick grill pan and cook the marinated chicken on a low flame until it turns golden brown from the bottom, for about 7-8 minutes covering with lid. 

7. Turn the chicken breast and cook from the other side for about 5-6 minutes, covering with lid.

8. Place the cooked chicken on a serving plate, garnish it with the spinach dressing and serve hot with mint chutney.
