Red Velvet Pancakes

So valentine’s week is here. We decided to come up with some easy & amazing recipes for you to make for your someone special. This is the perfect breakfast treat for your loved ones.

These pancakes are light and fluffy, with just a hint of sweetness, but not too much so that you can still drown them in delicious maple syrup and cream cheese glaze.

Recipe
Serves – 2

INGREDIENTS

A. For Pancakes
½ cup all purpose flour
2 tbsp powdered sugar
¼ tsp baking powder
⅛ tsp baking soda
2 tsp cocoa powder, unsweetened
A pinch of salt
1 egg, at room temperature
¼ tsp vanilla extract
5 tbsp milk
3 tsp melted butter
Red food colouring
B. For Cream Cheese Glaze
3 oz of cream cheese, at room temperature
¼ tsp vanilla extract
½ cup powdered sugar
2 tbsp whole milk, at room temperature
C. For Garnishing
Maple Syrup
Bananas

METHOD

1. In a bowl combine all purpose flour, powdered sugar, baking powder, baking soda, cocoa powder & a pinch of salt. Mix and set aside.

2. In a separate bowl add in the egg, vanilla extract, whole milk & melted butter. Whisk well.

3. Add the dry ingredients to your wet ingredients along with some drops of red food colouring.

4. On a medium flame, grease a non-stick pan with butter. Once the pan is hot enough, take 1/4th cup of the batter and pour over the hot pan. Cook for 2-3 minutes.

5. Once you start to see little bubbles on top, it’s time to flip the pancake carefully. Cook on low flame for another 2-3 minutes.

6. Take a heart shaped cutter, and cut the pan cakes one by one from the centre. Set aside while you make the glaze.

7. In a large bowl, mix together the cream cheese and vanilla extract, add the powdered sugar, slowly get it incorporated into the cream cheese (use a spatula for this, it’s easier than a whisk) and slowly add the whole milk while constantly mixing until you achieve your desired consistency.

8. Stack up your pancakes and add the cream cheese glaze in the centre and some over your heart cut outs of pancakes.

Serve with some bananas and OFCOURSE maple syrup.
