Watermelon Basil Cooler

Watermelon is probably one of our summer highlights and that’s why this watermelon basil cooler felt just right. It’s incredibly refreshing and hydrating because watermelon has so much water in it.


There’s only a small amount of sugar which is practically non-existent because of the lime juice which gives it a good tartness. It’s the perfect sun-is-shining-so-I’m-sitting-on-my-back-porch drink.


A cool, refreshing mocktail that only takes 10 minutes to make. 


Serves – 5


A. For Watermelon Juice
2 kg watermelon, flesh removed & roughly chopped
5-6 basil leaves
3 tbsp boora sugar
Juice of 1 lemon
B. For Assembling
200g watermelon, flesh removed, de-seeded & finely chopped
Sparkling water (club soda)
Ice cubes

METHOD1. In a blender, blend together roughly chopped watermelon, basil leaves and boora sugar until smooth.


Please Note: You can add more or less of boora sugar according to the sweetness of the watermelon.

2. Strain the blended juice using a strainer in a bowl.


3. Add the lemon juice. Mix well.


4. Now while serving, put some finely chopped watermelon at the bottom of each glass.


5. Fill ¾th of the glass with the watermelon juice and ¼th with sparkling water. Top it with some ice cubes and serve.
