Spicy Grilled Chicken Breast

Recipe 
Serves – 2

INGREDIENTS 

A. For Chicken Breast
500g Chicken Breast

120g Hung Curd, skimmed milk
1 tbsp Coriander Powder 
2 tsp Red Chilli Powder 
1/2 tsp Cumin Powder
1/2 tsp Chaat Masala
1 tsp Paprika 
1/2 tsp Mango Powder 
1 tsp Garam Masala 
2 tsp Oregano 
1 tsp Ginger Garlic Paste 
Juice of one lemon 
1/2 tsp Red Tabasco 
1/2 tsp Basil Leaves  
1/2 tsp Parsley
Salt to taste

2 tsp Olive Oil
B. For Garnishing 

Lemon Wedges
Coriander Leaves
Green Chutney (The Chutneys)

METHOD 

1. Let’s start by pounding the chicken breast. Take a fork and a hammer, hold them together keeping the fork below the hammer and softly flatten the chicken breast.

Please Note:  If each piece of chicken is a different size, they will cook at an uneven rate. If you don’t pound them out, some breasts will cook faster than others, leaving the thinner breasts dried out, while the thicker ones can be under cooked. Pounding also tenderizes the meat, making the cooked result more tender.

2. In a deep bowl add hung curd, coriander powder, red chilli powder, cumin powder, chaat masala, paprika, mango powder, garam masala, oregano, ginger garlic paste, lemon juice, red tabasco, basil leaves, parsley & salt. Mix well.

3. Add 1 tsp oil in the marination along with the chicken breast and gently massage the chicken with the marination. Marinate for 3 hours.

4. Heat a grill pan with the remaining 1 tsp olive oil and place the chicken on it. Cook for 8 minutes on low flame from one side, flip and cook for another 8 minutes from the other side. Cook until the chicken is golden brown in colour and is cooked through.

While serving garnish it with some lemon wedges, coriander leaves & green chutney (The Chutneys).
